Grilled Lemon Garlic Broccoli

We had our inaugural Sunday night barbecue for the summer season last weekend.  Hanging out with friends is a great way to end the weekend. Craig served his famous Lemon Garlic Broccoli with us and everyone gobbled it up.  I twisted his arm and he agreed to share it with you. The recipe is so easy and only 4 Weight Watchers Points.

We grilled the broccoli in a covered saucepan.  The grilling, along with the garlic and lemon, transform this dish into a delicious side.  People who don’t like broccoli find themselves won over by the amazing flavor.

Grilled Garlic Broccoli

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Ingredients

  • 1 head broccoli
  • 4 cloves garlic
  • 4 tablespoons tablespoon olive oil
  • Juice of 2 lemon
  • 1 teaspoon sea salt
  • parmesan cheese (optional)

Instructions

  1. Cut the broccoli florets from the thick stalks, leaving an inch or two of stalk attached to the florets, discarding the rest of the stalks. Cut the larger pieces through the base of the head with a small knife, pulling the florets apart.
  2. Mix together broccoli, garlic and juice of 1 lemon.
  3. Heat olive oil in a pan on top of stove or barbecue. Add in broccoli mixture and cover. Stirring occasionally cook 7 to 10 minutes or until broccoli starts to brown. Remove from heat and sprinkle remaining lemon juice on top.
