This Baked Oatmeal with Nectarines and Cherries is a great way to start your day. Breakfast is so important but sometimes I find myself running out the door and skipping it. I love Oatmeal but don’t have the time to babysit the pot while getting ready for work. This is easy, you mix it up, pour in a pan and it bakes while you are off tending to other things.
I made these in individual ramekins but you can bake it in a 9×9 square. Cut in to squares to serve. Wrap up any leftovers, refrigerate and reheat throughout the week.
When cherries are in season I add them into everything. Adjust this recipe easily by substituting your favorite fruits.

5 Weight Watcher's Points Plus Baked Oatmeal with Nectarines and Cherries recipe.
Ingredients
- 2 medium nectarines, peeled, cored and chopped
- 1 cup blackberries
- 1/4 cup honey
- 1 cup uncooked quick oats
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon pinch of salt
- 1 cup fat free milk
- 1 egg
- 1 tsp vanilla extract
- 1/4 cup chopped almonds
Instructions
- Preheat oven to 375F. Spray a 9' square pan or 6 ramekins. Place the nectarines across the bottom and sprinkle half the blackberries over.
- Mix honey, oats, baking powder, cinnamon, salt, milk, egg and vanilla together. Pour mixture over fruit. Sprinkle top with remaining blackberries and almonds.
- Bake for 30 to 40 minutes, or until top is lightly browned.
