This Baked Oatmeal with Nectarines and Cherries is a great way to start your day.  Breakfast is so important but sometimes I find myself running out the door and skipping it.  I love Oatmeal but don’t have the time to babysit the pot while getting ready for work.  This is easy, you mix it up, pour in a pan and it bakes while you are off tending to other things.

I made these in individual ramekins but you can bake it in a 9×9 square.  Cut in to squares to serve. Wrap up any leftovers, refrigerate and reheat throughout the week.

When cherries are in season I add them into everything.  Adjust this recipe easily by substituting your favorite fruits.

5 Weight Watcher's Points Plus Baked Oatmeal with Nectarines and Cherries recipe.

Ingredients

  • 2 medium nectarines, peeled, cored and chopped
  • 1 cup blackberries
  • 1/4 cup honey
  • 1 cup uncooked quick oats
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon pinch of salt
  • 1 cup fat free milk
  • 1 egg
  • 1 tsp vanilla extract
  • 1/4 cup chopped almonds

Instructions

  1. Preheat oven to 375F. Spray a 9' square pan or 6 ramekins. Place the nectarines across the bottom and sprinkle half the blackberries over.
  2. Mix honey, oats, baking powder, cinnamon, salt, milk, egg and vanilla together. Pour mixture over fruit. Sprinkle top with remaining blackberries and almonds.
  3. Bake for 30 to 40 minutes, or until top is lightly browned.
