When I think of summer Watermelon comes to my mind.  We ended our summer barbecues with big, thick slices of watermelon.  I loved to salt it back then.  Earlier this summer I created a Watermelon Margarita
and I have a jar of pureed watermelon waiting to create another drink tonight. Maybe a Strawberry Watermelon Aqua Fresca.  Doesn’t that sound refreshing?

Watermelon Mint Salad

Watermelon Mint Lime salad that is 1 Weight Watcher Points Plus recipe.

Ingredients

  • 1 small watermelon, cubed, seeds removed
  • 1/2 cup lime juice
  • 2 tablespoons honey
  • 1/4 teaspoon cayenne pepper

Instructions

  1. Gently mix watermelon and mint together. Place in hallowed out watermelon or bowl. Refrigerate until ready to serve.
  2. In a bowl mix together lime juice, honey and cayenne pepper. Toss with dressing just prior to serving
